The UFC has released the fighter salary amounts for UFC 64: Unstoppable. The total fighter payroll disclosed by Zuffa, LLC was $209,000. Fighter bonuses and other payments do not need by be made public, and Zuffa has never in their history offered those numbers to the public. (Not that they should. No other corporation reveals their employees salaries.)
